Combine in a blender or food processor and serve immediately.

Healthy Chocolate Chip Pancakes

Serves 2

Ingredients

2 Tbsp. protein powder
2 Tbsp. almond meal
2 eggs
1/2 cup water
1 Tbsp. raw honey
1/4 cup chocolate chips
1 Tbsp. sunflower oil

Directions

Combine all the ingredients until a thick batter forms. Heat oil up to medium heat in a nonstick skillet or griddle. Add a quarter cup of batter at a time. Flip each pancake when the batter begins to bubble a bit and cook a few more minutes on the second side.

Pumpkin Chocolate Chip Muffins

Serves 12

Ingredients

3 1/2 cups old-fashioned oats
2 cups pumpkin puree
1 cup applesauce

3 tsp. cinnamon
3/4 tsp. salt
4 tsp. baking powder
1/4 cup cacao chips

Directions

Preheat oven to 350 degrees F.

Puree the oats in a food processor. This is an important step to ensure that the batter is smooth.Mix oats with the remaining ingredients.

Fill muffin tins 3/4 of the way full. Bake for 15 to 20 minutes or until a fork comes out clean. Once cooled, store in a sealed container.

No Bake Chocolate Peanut Butter Cookies

Serves 20

Ingredients
1 cup all-natural peanut butter (or almond butter or other nut butter)
1 cup quick-cooking oats
½ cup raw honey
1 cup chocolate protein powder of your choice

Directions

Combine all of the ingredients until the batter is smooth.

Roll into 20 individual balls, about one-inch each.

Flatten each slightly so it’s shaped like a cookie. The best part about these cookies is that they don’t need to be baked.

**Notes: These are great as a morning pick-me-up or a healthier dessert. For additional richness, add some chocolate chips. Make these for the week ahead. They make a great substitute for a breakfast or energy bar.
