- 3 beets
- 2 onions
- 1 tsp. extra virgin olive oil
- 1 tsp. apple cider vinegar
- A pinch of Himalayan pink salt
Cook the beets in salty water, then chunk them up. Chop the onions, and add them to your beets. Drizzle over your olive oil and vinegar, and season to taste.
